Murray's Cave Aged 80:10:10 Special Edition
This unique Caves creation hits the mark of tasting good and doing good. A special edition of our award-winning mixed milk 80:10:10, 15% of all its proceeds will be donated to ROAR New York (Relief Opportunities for All Restaurants), a financial aid fund for NYC restaurant workers.
These semi-firm squares typically go through a standard aging process in our Washed Rind Cave, but this “golden” version is washed in a local brew. Gold Strap, a wheatwine from Brooklyn’s Other Half Brewing Co., lends this bready, snackable cheese a richer, more intense flavor that’s reminiscent of chicory and dark roast coffee. Wheatwine, a type of beer aged in bourbon barrels, imparts just a hint of boozy smoke, giving 80:10:10’s buttery profile a savory boost--think toasted hazelnuts and fresh maple syrup. Try it with a drizzle of buckwheat honey on a rustic cracker.
