Capriole Goat Cheeses

Capriole’s Judy Schad is one of the legendary “goat ladies” from the forefront of America’s artisanal cheese revolution in the 1980s, and she’s still producing phenomenal cheese. She crafts her cheeses for complexity. As she puts it, “I want a beginning, middle, and end.” Her cheeses have all three in spades.
