A Classic Blackcurrant Apéritif
Kir Cocktail
Kir was originally called Blanc-Cassis, but was renamed for the man who made it world famous. Félix Kir popularized the sister city movement after World War II, and he offered the drink when socializing with visiting delegations. It’s as simple as an apéritif gets, and with its dark, sweet, berried flavors, just about as delicious as well. Those flavors work particularly well with the sweet cream, brown butter, and stone fruit characteristics of the classic French Comte.

  • 2 1/2 oz white wine, preferably Chardonnay or Chablis
  • 1/4 oz crème de cassis
