This Armenian version is a long way from that processed stick of mozzarella. Braided beautifully, it has that consistency and peel-ability that you know and love. Velvety and springier than its sophomoric relative, it is notably more buttery with a sharpness that doesn't exist in the other. Hand-pulled from fresh pasteurized cow’s milk, this might not make it into your lunchbox, but you should serve with a buttery Chardonnay.
