Goats graze on mountain fields besides the shore of the Mediterranean, and their milk is imbued with the floral bouquet of the wildflowers and fresh grass. When Casa Madaio makes the milk into cheese, the textured ivory wheel of Caprotto takes on the appearance of the canvas it's wrapped in, browning to a light amber as it ages. Bite into a sliver of supple and dense paste to reveal flavors of roasted hazelnuts and bright citrusy lemon. Those tangy flavors depart, leaving traces of freshly cut hay and mountain grass on the palate. Wash down those earthy notes with a floral Fume Blanc, or a sparkling saison.
