This pudgy, silky cheese is named for its birthplace along the Ulla River in Galicia, Spain. Arzua Ulloa is a PDO-protected cow’s milk cheese that is recognizable by its soft, creamy paste and pliable rind. The satin-like paste is both sweet and luscious, with flavors of freshly churned butter and rising dough. Try smearing this cheese on a hunk of rustic bread or melt it down for fondue and pair it with Trois Petits Cochons Cornichons and Peppadews.
