Blakesville Creamery St. Germain
Meet a Pyrenees-style saint from one of Wisonsin’s newest creameries. Founded in 2020 as part of an existing dairy farm of the same name, Blakesville Creamery has a line of cheeses made from their herd of 900 goats, including this firm and mild milky stunner made in a similar style to Basque favorites like Pyrenees Brebis. Supple and snackable, it has a sweet, distinctive goat cheese tang up front followed by subtle herbaceous notes that bring out an essence of pine needles and sauteed vegetables. This unique and complex goat’s milk tomme is made to be paired with bright, acidic wines like Txakoli and a side of Amarena Cherries.
