Transported from the Basque country to a mountain village in Val de Bagnes, a rugged herd of sheep graze on fragrant pastures, a novelty in cow-focused Switzerland. The raw milk wheels are aged in a state-of-the-art facility, creating something that's like a bold cousin of Raclette. Creamy textures meet roasted vegetable flavors and a crème fraîche tang.
