Petit Billy 8 oz
Made from the pasteurized milk of goats grazing the medieval town of Billy in France's Loire Valley, these rounds of chevre present a pleasant, lactic tang in a light, whipped paste. Traditionally, the disc of fresh goatâ€™s milk is lovingly swaddled in a chestnut leaf. This little wrapped beauty is made by the same producer as our lightly aged Loire goats ValenÃ§ay and Selles Sur Cher, but without the addition of external mold cultures. An ideal starter on a summer cheese plate, as a slice of Petit Billy does not leave the palate overwhelmed. Let this light cheese develop with a regional grassy white wine, such as a Loire Valley Sauvignon Blanc.

RoséWe love them all! Everything from light, crisp Provence style to deep and fruity Spanish Rosados. Don’t be afraid to enjoy rosé year-round, but we like the summer staple best with refreshing, mild cheeses that are great in warm weather.
Pair with: Young chevres like Coupole and bloomy rinds like Moses Sleeper for the lighter stuff. A darker, fruitier rosé can stand up to a heavier cheese like nutty Pecorino Oro Antico. Sparkling rosé is a perfect match for Nettle Meadow Kunik.
Sauvignon BlancTypically bright and lemony, with clean citrus flavors. Can also have grassy and vegetal aromas (think green bell pepper).
