Torchon is French for ‘dish towel’ and English for ‘the most traditional way to prepare foie gras. The name comes the way the dish was initially wrapped, and though the folks at Rougie didn’t pull a rag from the kitchen to package this foie, they are still presenting it in the proper way. And they’re preparing it in classic form as well—with a hit of Port and a gentle sous vide. The result is the quintessential foie gras: rich, dense, smooth, and decadently delicious.
