It’s the hottest thing since sliced cheese—literally. Traditionally, cheesemakers in the Alps would scrape melted cheese from fire-heated boulders to enjoy with boiled potatoes and cornichons, and this ritual hasn’t changed much over the years. Named for the French verb “racler,” meaning “to scrape,” Raclette nowadays is most commonly seen being scraped from large wheels over greens or root vegetables.
