Our newest experiment is ready to “fly” off the shelves of the Murray’s Cheese Caves: Project Snowbird, a robust, springy wheel of Spring Brook Tomme washed in Snowbirds Imperial Stout from Other Half Brewing Company. Spring Brook, a Vermont-based farm, uses traditional methods of European Alpine cheesemaking, providing us with a fresh, grassy cow’s milk creation. Brooklyn-based craft brewery Other Half provides hints of chocolate and almond from their dark Imperial Stout, which coats the rind of our Project Snowbird during its stint in our caves. The results of this latest collaboration? A highly snackable Alpine cheese with a warm, hearty flavor. Enjoy with a glass of dry white wine, or of course, a dark stout.

ChiantiChianti is named for a region in Italy, and is actually made from a blend of grapes (mostly Sangiovese). This dry, medium-bodied wine has a distinct herbal quality (think rosemary and oregano) with flavors of dried plums and cherries.
Porters and StoutsPorter, Stout, Imperial Stout
Welcome to the dark side of beer. Porters and Stouts are born of heavily roasted malted barley, which colors the beer and develops toasty flavors recalling chocolate, coffee, and chicory. Looks can be deceiving, though: dark doesn’t always mean strong. Porters and stouts can be incredibly light in body, or big boozy affairs that pour like syrup.
Pair with: A mild, creamy blue like Cambozola Black.
