We’re ready to pour a toast to this fruity creation from California’s Stepladder Ranch & Creamery--crafted with local, family-owned cow’s milk, this Spanish-style wheel is a sweetly snackable hard cheese with a deep purple rind. After working with a local winery to create a full-bodied Syrah specifically for cheesemaking, Paso Vino is soaked in a wash of the original aromatic wine before being pressed and aged, emerging with a rich, raisin-like sweetness and smooth, mild profile. Stepladder, located on the Central Coast of California, focuses on creating small-batch cheeses from their own herds of goats, as well as milk from local farms.
