A bâtard is like a baguette, but wider and thicker. Hence its nickname, "the torpedo loaf." As with a proper baguette, it has a rustic, crusty exterior and an interior that's airy and a bit springy. Also as with a proper baguette, it is the result of French technique, a practice that Bien Cuit knows a thing or two about.
The brainchild of three-time James Beard Award nominee Zachary Golper, Bien Cuit is a Brooklyn bakery that's modeled after the French bakeries of yore, using traditional grains, rustic practices, and local ingredients. We are excited to be partnering with Bien Cuit to provide their products outside of New York for the very first time.
