Ortiz is still a family run business near the Bay of Biscay, Spain, buying from day boats that catch via line and pole. The belly of tuna is cut, cleaned and packed by hand, so you get big meaty pieces of ventresca tuna that stay preserved in oil. Spritz with a little lemon and toss with capers and greens for a great meal!
