This best-seller has a long history. Named for the town in Somerset, England where it was born, cheddar is a versatile cheese that also relies on a specific process to give it its texture and flavor. Cheddaring, the make process, includes the stacking of curd loaves to get rid of excess whey, which helps the cheese maintain its traditional levels of acidity and density. But that doesn’t mean all cheddars are the same. Just how Neal’s Yard is unique from Cabot Clothbound, white cheddar is from Irish cheddar, smoked cheddar is from goat cheddar, and so on, all cheddars can range from sweet to savory and from creamy to crumbly.
