As a special celebration for American Cheese Month, we’ve teamed up with our pals upriver at the venerable Hudson Valley Brewery to create an all-new cheese: The Dutchess.
The Dutchess is named for the county that Hudson Valley Brewery calls home, and the cheese is appropriately regal. It’s a triple-creme button washed in the brewery’s Purelake beer, a sour IPA brewed with raw wheat, malted oat, milk sugar, and Petit Sirah grapes. As we age it in our cheese caves, The Dutchess develops a smooth, dense, and buttery-sweet inner paste and a rind that holds notes of pho broth, rendered pancetta, and pink sea salt. Like the beer it's washed in, this cheese is meant to be slowly savored, but is best enjoyed when it’s fresh. A whole wheel is 8 ounces or 1/2 lb.
